Copycat Crumbl Pink Sugar Cookies

Ingredients
  

Cookies:
  • 1 stick butter softened
  • ¼ cup vegetable oil
  • ¾ cup granulated sugar
  • 3 tbsp powdered sugar
  • 1 egg
  • 1 ¼ tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp cream of tartar
Frosting:
  • 1 stick butter softened
  • 2 ½ cups powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract
  • Pink food coloring

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment.
  2. Whisk flour, baking powder, baking soda, and cream of tartar.
  3. Beat butter with granulated + powdered sugar until fluffy.
  4. Mix in oil, egg, and vanilla.
  5. Add dry ingredients; mix until just combined.
  6. Scoop large dough balls, flatten slightly, and bake 9–12 minutes.
  7. Cool completely.
  8. Beat frosting ingredients until smooth, then tint pink.
  9. Frost cookies generously, chill briefly, and enjoy!
